Laney's brunch platter

Once in a while, I wake up in a good mood and volunteer to cook breakfast. This platter is named after me because it has some of my favorite elements: spicy salsa, caramelized onions, sausages, eggs, and whole wheat toast. Served with a cup of coffee on the side, this would be the perfect way to treat or impress someone special! Enjoy!


Laney's Brunch Platter


2 pork sausages
2 eggs
2 slices of whole wheat bread
1 ripe tomato, chopped
1/2 small  yellow onion, sliced
A few sprigs of cilantro, finely chopped
Dash of cayenne pepper
1/8 tsp paprika
Salt and pepper
Olive oil

1. Preheat oven to 385F. Pan fry sausages until browned. Transfer sausages to a baking tray, make a few slanted slits on the top side of sausages and continue cooking in the oven for 15 minutes.
2. Using the same pan, saute onions for about 10 minutes. Make sure not to burn the onions by keeping the heat on medium low and adding a dash of olive oil when the onion gets too dry.
3. In a small bowl, mix tomato, cilantro, cayenne pepper, paprika, salt, pepper and a few drippings of olive oil. Let sit so all the flavors can develop.
4. When onions are ready and sausage is almost done, set onions on serving dish. Fry eggs on the pan and also put bread into toaster. Assemble all your ingredients on serving dish and serve immediately.

  1. Laney, this Brunch Platter looks fabulous! You see, waking up in a good mood always has positive residual effects. I love the carmelized onions. What a sweet treat to compliment the spicy salsa. And cilantro just makes everything good. When you open up "Laney's Diner" your customers will be lining up around the block.
    And by the way, I'll take my eggs over medium.
